    Looking for any advice on brewing a 7bbl batch of a big wit.

    Just did one....not sure what to tell you though.

    Some random thoughts.....

    Maybe keep the gravity reasonable(say 15-16p) and touch it up in the kettle with the sugar of your choice to get your final OG where you want. This will help keep it on the dry side and keep your efficiency high.

    Obviously beef up the bitterness a tad, but not too much, you want to keep that creamy quality from the unmalted wheat.

      Why?

      I hate to say it but why? The great thing about wit is they are drinkable and you can have more thatn 2 pints. I wouldn't want to drink a "fat" wit. Make whatever want I'm sure it will be great, just don't calll it wit. I have had several mid-range gravity Belgains that are wit like but call them tripples. Just my thaughts
