  • Relation between pH and carbonation?

    Does the pH of a batch of beer have any affect on the level of carbonation for that batch. I'm having a problem with my beer not carbonating enough and was just curious if the pH has any affect on that.

    Simply put- no.
    Carbonation is a function of pressure and temperture and the gas used, over time. Also the gas to liquid ratio of the tank is important- ie: head space/surface area.
    What is your methodology? Is it an equipment problem? At 14psi with a decent carb stone and 15-20% headspace you should you should be able to carbonate a 7-10bbl batch in an hour or two.

        Might be the stones..

        Your carb stones may have acquired enough beer stone to reduce their flow rate. Soak them overnight in 5% Phosphoric Acid.
