  • CO2 Issue

    We're having a strange issue with some kegs. When the beer is first poured, there is a little tartness that goes away once the beer sits for a few minutes. It's not every keg or every batch.

    We force carb 40 BBL over 3 or so hours. I'm wondering if it's the CO2 we're tasting? We clean with a Premier Keh washer so I don't think its dirty kegs and it doesn't show up in the bottled product.

    is it with all the beer or just one beer?

      It is possible that your beer is a bit too acidic, so that when you add the acidity of the carbonation (regardless of method to carbonate), it takes the acidity beyond your preference. As the carbonation dissipates, your beer's acidity perception may drop to a more reasonable level. Is acidity/pH something you monitor or adjust for?
      Is it possible it relates to your glassware cleaning residue?

        It's with all the beer, but not every keg.

        The ph hasn't changed. This just started happening within the pat 3 months and we've been brewing this beer for over 10 years.

          What's your sanitizer for the kegs? Is it possible that there's some in the keg or in the line that could be getting into the beer? PAA or Chlorine Dioxide definitely have a tart taste. Iodine is a little more metallic tasting.

            My first thought would be some contamination being picked up in the lines. Does beer sit in the lines between batches, or are they being cleaned every time? If the runs are fairly short, changing out the line might be a quick/cheap first check.

              Our final sanitizing rinse is diluted iodaphor, so I'll make sure the dilutions are correct.

              I thought about lines, but it's not every keg and it dissipates after about 2 minutes in the glass.

                rinse out the iodophor. Trouble is that then your risne water has to be absolutely sterile - but possibly better than tainted beer.
