    Hey yall, I am building out a brewpub. We expanded into the suite next to our restaurant and will be putting in a trench drain. This drain will attach to the other sewer out line from that space, not from our restaurant. Our plumber is asking us about what type of trap system (grease, safewater), if needed at all, is needed. Now, I have read that brewery waste water is graywater and does not need to go through a grease trap, correct? Where can I find documentation on this to use in case the county says something different? County code can be based on interpretation. Any help on this is greatly appreciated. Thank you.

    Not sure about there at your location but in Seattle I just finished installing a new trench drain last week. The local plumbing inspector passed my work with just a simple trap...1 180 degree bend and 2 90's. Uniform plumbing code would likely be your best bet for documentation.
