My name's David Schroeder, I have two years of experience in every aspect of the brewery, but the kicker is said brewery is completely undersized for its demand. This means I was cleaning 5 times as many tanks, brewing 5 times a week on a 15 bBl system, producing 11,000 bBls in 2012 up from 5500 in 2011 and 2500 in 2010. During this change I've seen every change necessary to maximize the efficiency of the brewery all the while improving the quality of the beer.
