    Located in a renovated, Civil War-era textile mill in downtown Lewiston, Maine, Baxter Brewing Company is one of the fastest-growing breweries in the North East. Baxter was the first brewery in New England to package 100% of its beer in metal containers only (kegs and 12 oz cans) and the first to brew more than 5,000 barrels of beer in our first year of business (2011); an achievement which earned us the “2011 New Brewery of the Year” nod from Bevnet Magazine. Currently, Baxter produces 6 innovative, west coast-inspired, flavorful American ales, including a line of seasonal varieties all of which engage natural flavors and ingredients and push the boundaries of their respective styles.

    Summary:

    The brewer works in all aspects of wort production, from raw materials to fermentation, with rigorous attention to maintaining consistency and quality. In addition to regular brewing shifts, the brewer assists in cleaning and sanitation, lab work, monitoring and maintaining inventory of brewing materials, and works with the other brewers and cellar staff on yeast management, tank cleaning, monitoring fermentation and conditioning of beer, sensory analysis, equipment maintenance, and other tasks as needed. The brewer must be able to work both independently and as part of a team.

    Primary Responsibilities:
    • Complete various brewhouse operations: milling, mashing, lautering, boiling, whirlpooling, knockout, grain out, brewhouse CIP (including heat exchanger), fermenter CIP, capping, chilling, wort cooling, dry hopping, racking, and various other procedures.
    • Perform designated quality control checks at various stages of brewing process: cell counting, checking gravities, monitoring fermentation (including glycol controls), pitch rates, yeast viability measurement, gravity measurements, DO measurements, process sampling and sensory analysis.
    • Regular night and weekend hours required due to variation in brewing schedule and company events. Expect schedule to vary based on production needs.
    • Other duties and projects as assigned.


    Knowledge and Skills:
    • Passion for and knowledge of craft beer
    • Problem-solving ability.
    • Ability to read, understand, and follow written instructions.
    • Minimum 1 year professional brewing experience required.
    • Advanced knowledge of brewing science and formal training - a diploma from a recognized brewing science program is preferred.
    • Experience in and understanding of laboratory testing and microbiology as it relates to the brewing process.
    • Knowledge of safe chemical handling.
    • Knowledge of safe work operations, safety policies and procedures.
    • Knowledge of machinery and systems.
    • Strong mechanical aptitude.
    • Self-motivation; ability to work independently and as part of a team.
    • Computer proficiency (basic use of word, excel, and email).


    Work Environment:

    Physical Demands and Working Conditions:
    • Able to stand for long periods of time (up to 10 hours per day).
    • Able to frequently lift heavy materials (minimum 55 lb. boxes shoulder high up to 50 times daily).
    • Occasional work on tanks over 23 feet high.
    • Able to work with hazardous chemicals.
    • Handling of hazardous materials.
    • Exposure to hot fluids.
    • Exposure to pressurized vessels and transfer lines.
    • Exposure to extremely variable temperature levels.
    • Performing job with and around moving machinery.
    • Able to work safely and responsibly while alone.
    • Able to work night shifts.


    Visual, Hearing, Dexterity & Mental Demands adequate to perform the essential functions of the job, such as all demands associated with brewing.
