  • Washing yeast with chlorine dioxide?

    My brewery wants to try out washing yeast to 'clean' it, however with chlorine dioxide instead of the usual phosphoric acid.

    Anyone have experience with it and the results of using the treated yeast? I did some reading on sodium chlorite and it seems rather hazardous to handle especially without the necessary safety gear.

    Up till now we've never done anything of that sort, so I'm rather skeptical of the necessity of it all.

    There's a lot of good resources for yeast handling & cleaning on the Brewing Science Institute website. I think they address using chlorine dioxide to wash yeast.
