  • Yeast from my cooler

I've got a Belgian yeast strain that I'd like to reuse. It's been sitting in my cooler in a converted keg for about 5-6 months. It was originally used in a 16 Plato brew. I just pulled a sample and did a cell count. It's looking really good for being dormant for almost 6 months, very little dead cells. I'm still a little hesitant due to the amount of time it's been sitting. Thoughts/opinions?

Pondering seeing how it performs on a 5 gallon pilot batch first.

    Cheers,
    Mike

Id make a few 1qt starters and pitch the most active into your 5gl batch, then use that as your pitch for the full volume. Using yeastx and good aeration every step of course, and taste/smell test for nastiness.
