  • Yeast generations rule of thumb for higher OG, over hopped wort?

    Ive read some differing views on what to do with harvesting yeast from wort with an O.G. of 1.078 and above, and wort with an extreme amount of hops, double ipa, etc. Some people say do not reuse the yeast, some people say it doesnt matter, you can use 10 generations +. What does everyone practice here with their yeast? We have a house strain that is used in a session brown, and also an insane ipa.

    Here is some empirical data showing yeast viability as a function of alcohol exposure over time:
    When yeast sits in the bottom of a fermentor for a period of time, the alcohol will kill some of the yeast.  But how much yeast is killed...
