    Located in a renovated, Civil War-era textile mill in downtown Lewiston, Maine, Baxter Brewing Company is one of the fastest-growing breweries in the North East. Baxter was the first brewery in New England to package 100% of its beer in metal containers only (kegs and 12 oz cans) and the first to brew more than 5,000 barrels of beer in our first year of business (2011); an achievement which earned us the “2011 New Brewery of the Year” nod from Bevnet Magazine. Currently, Baxter produces 6 commercially-available innovative, west coast-inspired, flavorful American ales–including a line of seasonal varieties, all of which engage natural flavors and ingredients and push the boundaries of their respective styles–and several small-batch and one-off releases.

    Summary of Position: Responsible for supervising all brewing operations between the brewhouse and packaging. Manages cellar staff to conduct all transfers of post-fermentation beer and the subsequent cleaning of all tanks, internally and externally. Responsible for yeast management and related quality control work in the cellar and the lab. Responsible for filtration of finished beer using the DE filter or other clarifying equipment. Assists with recipe development and brewing on the pilot brew system.

    Primary Responsibilities:

    * Supervising cellar staff in daily cellar operations
    * Harvesting of yeast from fermentation tanks, managing yeast brinks
    * Assisting with laboratory analysis to maintain yeast health and other quality assurance standards
    * Filtration of finished beer to the brite beer tank, maintaining filtration systems
    * Cleaning and sanitizing tanks
    * Creation and documentation of standard operating procedures for various tasks
    * Assisting the brewers with preparations for brewing
    * Performing preventive and corrective actions on various hardware and equipment
    * Brewing on the pilot system and assisting with recipe development
    * Other duties as assigned

    Work Environment
    :

    Physical Demands:

    * Lifting: 50-75 lbs
    * Frequency of lifting: frequent
    * Typical business day: Duties completed as appropriate

    Additional Physical Demands:

    * Ability to speak and listen on a telephone
    * Ability to type, and view a computer screen
    * Ability to bend and sort paperwork in a filing cabinet.

    Visual, Hearing, Dexterity & Mental Demands:

    * Adequate to perform the essential functions of the job, such as all demands associated with brewing, canning and CIP; additionally, using a telephone, answering emails, filing paperwork, viewing a computer screen, and operating office equipment.

    Working conditions:

    The Head Cellar Person position functions in both a fully operational brewhouse and a normal office environment. Operational knowledge of both brewing equipment and standard office equipment is essential. Hazardous chemicals will be present in brewhouse operations.

    ** Night and weekend work WILL be required.

    Education & Previous Experience Requirements:

    * Previous cellar experience required
    * Previous experience with DE filtration required; previous experience with centrifuges and other finishing equipment a plus
    * High School Diploma or equivalent work experience
