    Hello All,

    G&P specify on their website that flaked wheat should work up to 40% of the grist by gravity. Does this imply that 60% 2-row pale should be able to convert that much flaked wheat completely? Or would I need some 6-row or additional enzymes?

    I have not been able to convert it completely even around 30% - wondering if I am missing something.

    PS: I nail my all-malt gravities and also the one beer I make with a significant (>20%) amount of flaked maize.

    What's your base malt? I just did a 55% 2-row (Briess) / 45% Flaked on our pilot system and had full conversion, brewhouse efficiency was perfectly in line with our all-malt beers. Single Infusion / No mashout.

    If you're having trouble converting it you could replace some of the 2-row with 6-row for some extra power, but there's no reason you shouldn't convert at 30 or 40% flaked.
