    Hi all,

    We are finishing a pilsner soon and will harvest the Czech yeast (Wyeast 2278)

    I want to do a California common next and then another pilsner.

    I've never gone from warm fermentation to cold with this yeast and I'm a little concerned about flavor and fermentation attributes changing from the lab pitch.

    Any thoughts? Anyone use this yeast extensively?

    personally i woudn't use this yeast above 59*. not sure what temp you plan to do your cali common at, but we do ours in the lager range bc honestly, it tastes a lot better as a true lager than as a hybrid, and we are using the San Fran yeast from white labs (wlp810 which is supposed to do well w higher temps) just my nano opinion.
