  • Yeast Brick Sanitation

    Just starting to brew big enough batches to buy bricks of dry yeast. If not using the entire brick, what are some good sanitary storage practices to follow? How do you guys store it?

    Don't.

    Fermentis states on the product data sheet to refrigerate below 4C and use within 7 days. IMHO if you cannot use the entire package of dry yeast immediately, then you should not use it later. Throw it away. Or use it for pizza. Why risk an off-fermentation for such a minimal cost?

      Agreed Phillip. Don't ever use open or compromised fermentis packs.

        Yep, use it within a couple days max or toss it.

        If you can't use a full 500g pack, consider getting re-sale boxes of 11g packets. I think it's like 20 per box. Might be more worthwhile.

          Hi my name is Caroline and I am the East Coast Rep for Lallemand Dry Brewing Yeast. I can only speak for Lallemands products, that once a brick is opened, you can vacuum seal the rest or put it in a plastic zip lock bag with no air, and it will be ok to last 3 more days in the fridge, or 1 more week in the freezer. It is not recommended to use the yeast after it's expiratory date of 3 days or 1 week after opening. If you have any additional questions please do not hesitate to contact me at cparnin@lallemand.com

              we're in the same boat.. our 4bbl system would need a bit more than half a brick for each brew, but i go with the packets and typically do 24 packets per batch (each box has 38).. with harvesting and such a couple boxes really does last quite a long time in our brewery

                Same in Canada

                I have a three barrel system in Canada and we are facing the same issues.
                What kind of prices are you getting on the boxes of 11g packs? Lallemand only sells bricks in Canada at about $140 canadian or 110 usd. For Individual packs I have to go through a home brew store and they're about 50% more expensive per gram.
                I don't want to leave open yeast around, but it might make more sense to use one brick over three days and two brew sessions.
                Thought? Advice?

                  i'm not sure how much they cost since i just do the ordering, the owner gets the invoices.. we do order from Brewer's Supply Group so I'm sure if you give them a call they'll let you know.. I have only really been buying Fermentis from them though so i'm not sure what the availability of lallemand is..

                      Just spitballing, but what about re-hydrating the other half of the brick in sanitary water in a keg/cornie, putting that in the cooler, then "feeding" the yeast by adding some sterile wort +nutrient once the temp is down below 40F? That's essentially what we do w/ our harvested slurries and our viabilities are generally fine even after 2-3 weeks (not always ideal, but it does work). Re-hydrated dry yeast should behave very similarly I would think.
