  • Menthol-like off-flavors in finished beer

    We are trying to track down where this menthol-like flavor in our finished beer is coming from. It even has a cooling effect, and one batch had a oily coating sensation on the tongue--not pleasant!

    We looked at MANY possibilities and talked with other local brewery's but have not found the culprit. We just brought samples to White Labs for testing (comprehensive flavor analysis and microbial) and are awaiting results. This has occurred on two different beers of ours with dissimilar ingredients. The flavor does fade with extended aging, but never goes away fully.

    Anyone out there had a similar issue?

      Not Diacetyl, and not even medicinal. A local Brewer suggested green apple, but my pallet (and the assistant brewers pallet) says menthol/eucalyptus. Definitely way stronger than mint. It's a very undesirable flavor!
