I am just starting up a barrel program for our brewery and have had decent success so far. I have a question regarding time lapse between barrel fills. As I understand it, there is the least amount of risk when you immediately refill a barrel. However, I am curious was experience you all have with barrels that have been purged with CO2 and stored in a walk-in at 37 degrees. How long can one expect a barrel to lie dormant under such conditions and still be usable? Thanks.
