Okay so we are starting 10 10bbl brewery with taproom and simple pizza kitchen. we will have 4 fermenters and 4 jacketed and insulated writes with glycol chiller.
If we planned on offering 12 varieties, I calculate 8 of the varieties would need to be racked in kegs requiring 100 kegs and serve the other 4 varieties straight from the brites.
How big a cold storage room would you advise? we have a 6000 sq ft warehouse big to work with....
I'm thinking 20x20 cold storage room that will be behind bar and tap kegs straight through the cooler.
