    Trying to figure out what kind of roof mount exhaust fan to get. 10 bbl steam fire brew house 8" stack.

    Hello,

    Why bother with a fan, the vapour will exhaust itself anyway.

    However, if the stack is long you will encounter the problem of refluxing, i.e. vapour containing undesirables such as DMS condensing in the stack and falling back into the copper. An exhaust fan will not help. Better get a vapour condenser as it will get rid of the undesirable as soon as they leave the copper and save you some energy as well.

      I disagree

      A fan for the exhaust does 2 things that I think are extremely valuable.

      One, it allows you to control boil off in terms of evaporation rate, and two, it allows you to boil harder for certain types of beer while reducing the head pressure and risk of boil over.

      Removing the condensate is a separate issue.

        I agree, I am going to install one at some point soon as I am only boiling off about 2% in an hour without it. I don't know why I am boiling off so little but I just am, despite boiling as strong as I can without boiling over.

          My city considered it a Type II commercial kitchen hood (yay!) so I had to get a mechanical permit and build it to their specific specs. Now I have a miserably under powered fan, but hey, at least it's to code!

            Condensate catcher

            Hi There,
            To prevent condensate falling back into the kettle you can install some kind of dish under the stack with outlet through the kettle hood. It can drain straight into the sewer or floor drain.
