  • IPA recipe for Bali drinkers

    Hallo, I am an Aussie brewer based in Bali, Indonesia and my boss wants me to develop a new variant brand around an IPA style brew. I will commence a pilot brew when the Australian Pale Malt arrives, we have had to substitute Pride of Ringwood hops (not available anymore?) with SuperPride and hoping to receive advise from this forum on what to use for late hop (elevated) floral notes with mid-range bittering (45 IBU maximum). We have SuperPride, Magnum, Citra and Cascade in stock and looking at other varieties to use re. Amarillo, Ahtanum or Falconers Flight for extra floral aroma. Indonesian's generally don't like their beer to be bitter.

    For my tastes, it would be Cascades at the start and the last 15 min. of the boil, then Chinook at knockout. Dry hop at the end of primary with Chinook.

      Yeah, Cascade close to the end of the boil and dryhop with ahtenum.

          I'd go very low with Magnum for bittering and heavy additions of Citra in the whirlpool and dryhop. You'll get some floral and tropical fruit notes and Citra can also give a sweet, juicy character....good for people who claim to not like IPA because they think they are all about bitterness.

            Citra, Cascade, Amarillo at knockout and dry hop with all as well. I shoot for 1.5-2 lbs per bbl total hops for IPAs, depending on abv and malt bill.

              Thanks guys, really helpful intel, particularly weights and volumes. The bittering component will be either Magnum or SuperPride (2x pilot brews) with Citra at knockout and dry hop with Ahtenum. Should add a nice spicy aroma with a manageable amount of bittering. Using our existing stocks of malt - full pilsner charge with lesser balance of Munich and Crystal for darker amber colour. Any thoughts on ratios of malt? We also stock rice as per the previous brewers trials but will buy in other adjuncts if necessary.

                Leave out the Crystal malts, or at least use them sparingly. You are in a hot climate, I'd go lighter and forget going for dark amber. People will drink more of it. Let the aroma hops shine.

                  Braumeistering the IPA

                  Hallo,

                  I put the first pilot 20L brew down today, using 65% Pils 30% Munich and 5% Crystal. Then hopped Magnum in the boil, Citra at the knockout and Cascade dry hopped to Fermenter. It was a little too dark but the aroma was right on, will cut back on Munich and Crystal for the next batch, then hopefully go to full-scale.

                      Lovina Beach summer ale for Bali drinkers

                      Well the IPA - Indonesian Pale Ale, has turned out nicely and am converting many Bali beer drinkers to appreciate a bigger hop flavor in their beer consumption, the line-up of malt was mainly Pils then 25% Munich and 0.5% crystal, then Superpride bittering at the start Citra midway and Cascade in the whirlpool.
                      Now its time to develop and produce an easy drinking (Pils%Corn%Rice%?) based summer style beer. Should I go with a very pale appearance and fruity Citra based hopping or both, to go with Hallertauer Magnum hop for dual bitterness and aroma? The IPA launch is in Jakarta early November.
