    Looking at taking advantage of our Oversized Mash Tun and double batch abilities by starting to brew Higher Gravity (1.5x Plato) and liquor back into the Fermenter, turning a 10 BBL batch into 15 BBL making it simpler to double batch into 30 BBL tanks rather than triple batch.

    My concept for this was to Clean the FV the day before as usual, and after sanitizing pump in the "liquor back" amount of Boiling Water (50% in this case) and let that chill in the FV over the next day until we are ready to send in the wort. My plan is to up the grain by 50%, Hops by 50%, Oxygen/Yeast by 50%. My concern is should I be acidifying/treating the water I'm sending into the Fermenter to a certain level? Or are there any other concerns/variables I might be missing out on?
