    Durham, N.C.-based Fullsteam Brewery, a seven-year-old “plow-to-pint” brewery producing 8,000 barrels annually (and growing!) is seeking a full-time QUALITY ASSURANCE ANALYST to help launch us into our new chapter of growth. This position will be responsible for the operation of our QA Lab and all associated duties, as well as some basic cellar duties. The ideal candidate is excited about this growth opportunity and available to start working immediately.

    Division/Department: Brewery
    Reports to: Head Brewer

    The Job

    Lab:
    • Develop and adjust water treatment for all Fullsteam beers
    • Yeast/bacteria management: propagation, pitching, harvesting, storage etc.
    • Monitor the fermentation process
    • Collect and analyze microbial samples from wort, beer, packaged products, etc.
    • Be familiar with forced wort tests, pouring brewing media plates (such as LMDA) and anaerobic vs aerobic platting.
    • Basic microscopy, and familiarity with identifying lactic acid bacteria.
    • Collect, inoculate, and propagate wild yeast and bacteria
    • Create and maintain standard operating procedures (SOPs) for any lab activities
    • Train and assist other lab technicians as needed


    Sensory Panels:
    • Develop and maintain Quality Control Inventory
    • Implement and administer sensory panels and off flavor training
    • Grow and develop the off flavor catalog
    • Develop Sensory Panels to full potential
      2-3 panels a week
      Manage and train 2-3 official tasters


    Other:
    • Maintain cleanliness of all work areas
    • Uphold an awareness of SOP’s for cleanliness
    • Emphasize quality, safety, and aseptic technique
    • Cellar duties: cleaning, fining, and monitoring secondary fermentation in barrels
    • Maintain relationships with yeast and laboratory suppliers
    • Create small batches of beer for the weekly R&D release, and/or product development, and special events
    • Beer competitions
    • Assist in selection of beers
    • Responsible for registration, packaging, and shipping
    • Administer and monitor various beer review platforms such as Untappd, BeerAdvocate, RateBeer
    • Other projects and responsibilities may be added at the company's discretion.


    Qualifications
    • Ability, or willingness to learn, to operate forklift, hand truck, pallet jack and other warehouse equipment
    • Attention to detail
    • Ability to stand for long periods of time.
    • Excellent communication, organizational and interpersonal skills
    • Ability to lift or move heavy products ranging from 5lb to 165lb.
    • Positive “Can-Do” attitude
    • Ability to work in a wide variety of temperatures (30F-110F)
    • Desire to make great Southern beer
    • Willingness to learn duties as they arise in correlation to growth and expansion
    • While not required, an ideal candidate would possess the following:
      1-3 years’ work experience within industrial microbiology and associated laboratory tests.
      Experience as a Microbiologist and/or substantial beer/beverage/food analysis experience
      Bachelor’s degree in biochemistry, microbiology, and/or molecular biology, or equivalent work experience.
