Hello kind brewer folk of Beervanaland!
For our winter seasonal I am considering the use of Cocoa beans. With many of the spices that we use, a quick dip in the boil is all that's required for just the amount of flavor and aroma we desire...but that being said, when we've used vanilla beens, a soak in the conditioning beer has always proven best.
Does anyone have any experience with Cocoa beans? Where/when are they added? Soaked? Boiled? And in what amounts, to what effects? Has there been any reduction in head retention, etc?
