    Malt Color Levels

    These numbers represent the color intensity of the malt. A small quantity of malt is mashed and the wort collected. The wort is put into a cell and light of a specific wavelength in the visible spectrum is shone through. The instrument measures the intensity of the light that makes it through to a detector on the opposite side. The color is inversely proportional to the signal at the detector, or directly proportional to the absorbance. It is important to note that this test does not measure the hue of the color (ie. is it brown or is it red?), it merely measures the intensity of the color.

    The units of this measure are degrees Lovibond. Caramel 20 then has a color intensity of 20 degrees lovibond.
