    Acid wash safe for Brett?

    Title says it all: is regular acid wash safe for a Brett-only culture?

    pH of acid wash being 2,1 - 2,2 for 2 hours

    Assuming Brett is a saccharomyces variant, then it should be fine. Keep the temperature less than 4 deg C, and stir regularly (need not be continuous) to ensure even temperature and no lo / high pH spots, and it should be fine
