How many yeast for a massive Imp Stout.

    Hi Guys,

I have a question, I brew a massive Imp Stout with a OG off 25.5 plato.
I allways used dry yeast ( 1 kg ) but know I want to try Liquid yeast.
    The Whitelabs WLP 007.
Can you give me a advise on how big the slurrie must be.
WhiteLabs advice me a 15 bbl.
Can I go lower with the bbl, say something like a 10 bbl or 7 bbl
    I can aired.

    Cheers,
    Kees

Standard is: 10Mill/ml and add 1 per deg plato over 14 so for 25.5p id like to see 21.5/ml viable cells. Basicaly a double pitch.

It would be wise to use that yeast in a lower gravity beer before you give it that huge gravity wort. It will ferment much better all around if you step it up first: cleaner, drier and faster.

double your 'normal' pitch rate and oxygenate like mad at cool-in.

    Pax.
