  • Decoction-like grainy taste

    I am brewing a Mexican-style beer, and want to introduce a bit of the grainy taste to it with infusion mashing. A couple of examples are Tecate and Bohemia that have the taste I'm looking for. Decoction is not an option. Are there any malts that can impart the grainy taste? I've heard mention of a Gambrinus malt and flaked barley, but would like to hear from someone(s) who have experience with this. Any suggestions?

    I brew a lot of Mexican lager in the summer months, and I use only 6 row and corn....and 100% liberty hops. I employ rests of 30 min @ 122f and 60 min @ 150. The grainy taste seems to come naturally
