mash- lauter tun rakes

I am building a 15 BBL brewhouse and need some advise regarding mash-lauter rakes. I am wondering if I can use rakes(knive style) both to cut the bed and to homogenize heat transfer while I'm heating with side-wall steam jackets.
I want to be able to do both infusion and step mashing in the same vessel.
Any design and/or drawings would be appreciated.

you can design them to cut in one direction and to swivel flat when aggitating the opposite direction.
