  • Lowest DMS-P North American Malt

    Looking for a North American, or possibly UK, 2-row / Pale Ale style malt that is very low in SMM/DMS-P, as we seem to keep having DMS crop up in our beers brewed with pale ale malt. Any recommendations?

    Hey Woolsocks! Most of the beers made with garden variety Pale Ale malts do not have a DMS note to them. Suggests a procedural/equipment issue. Is your boil vigorous? Have a drip ring in your kettle stack? How long is the wort left unfired in the kettle before cooled? Hope you can get this under control. Cheers!

      Yeah, it's a procedural issue. Our boil sucks. We do cool quickly, have the drip, etc. Our boil just sucks. So I'm looking for some malt that can tolerate a sucky boil. Oddly, we have no issues with continental pilsner malts.

        Hmmmm. That is odd that you would have DMS issues with ale malt vs. Pilsner. Is your kettle direct fired? Might be a way to increase heat transfer. Sometimes you can get quite a bit more heat from an Economite burner just by optimizing flame. Good luck!
