      that is who i am currently using and they had a difficult time getting me the last 55lb. bag. i should have mentioned that. i am not sure if they are the only ones that are out. or if i could find a different supplier.

        I use Brewers Supply Group. Never had an issue with candi shortage.

            I'm not sure if this is still the case, but there was a time just a few short years ago that many of the "brewing supply" companies in the Northeast were buying rock candy from Dryden & Palmer and selling it as "Belgian Candi Sugar". One of the companies I bought my candi sugar from forgot to repackage the box and left it in the Dryden & Palmer box....so the next time I needed candi sugar I contacted the company and was able to purchase for less than it was being resold to me.

              There is a new company that set up shop in North Carolina making Belgian-style Candi Syrup, I've got some in an Imperial Stout which is still fermenting, so the jury is out on how it works in the beer, but out of the container it smelled and tasted incredible.

                If you only need 40 to 80 kgs at a time, it is pretty easy to make.

                    If it's clear candi sugar you're looking for, try using regular sucrose or dextrose. According to Brew Like a Monk (p. 170), Victory brewing in Pennsylvania send some samples of clear candi sugar (in rock form) to Archer Daniels Midland (a very large food supplier) who told them it appeared to be reconstituted sugar and to "Buy Sugar." This obviously wouldn't apply to dark candi sugar, although it sounds easy and very inexpensive to make as Mad Brewer stated above.

                    Brew Like a Monk has a lot of great info on Belgian and Belgian style beer and breweries, I found the content about high adjunct usage and controlling fermentation temperature particularly interesting.
