How much cold storage for 30 BBL?
What is optimum size of cold storage for 30BBL micro? No brewpub, but will add a taproom later.

Depends
It really depends on the following (among other things I'm sure others can chime in on)
1) # of varieties you will be producing
2) how frequently you can do distributor pickups
3) If you are self-distributing
4) If you have a way to stack pallets
We've got a 20x40 cooler that came with our building -- and we're a 15 BBL system with 30 BBL FVs -- and because we can't stack easily we're quite packed a lot of the time. But we do 4 different varieties (only distributing 1, the rest are for the tap room), don't self-distribute, and get weekly pickups.
I think the answer on this one is "get as big a cooler as you can afford".

You may also consider if you are doing bottles, kegs, or firkins. Will you be force carbonating or bottle conditioning? The advice we were given by many people that we did not take is get much more cold storage than you think you need.

Like the other guys said, build as big as you can. We built ours twice as big as we thought we'd need, and now wish we'd built it 5 times bigger.
An under-sized cold room can quickly become your production bottleneck. And it's great to have extra room to keep your hops and sandwiches.

As big as you can afford to
We are a 20 bbl brewery looking to brew 6000+ bbls this year. Our cooler is 30x20x10. We rent an offsite warehouse with an 18x48x10 cooler and we are about to rent another warehouse with a 22x40x16 cooler. Once we have the second warehouse, I feel we will have adequate cold storage for the next 3-5 years.
Our original cooler will probably end up being mostly hop storage, tap room beer, and kegs for dock sales.
