What is stopping a jacketed fermenter from holding pressure? Is it just the vent at the top?
The jacket is designed to hold some amount of pressure, so it is not as if the whole thing will explode (right?). In my specific case, I have Letina fermenters that have a working pressure up to 35 psi for the jacket. The tank itself is not supposed to hold pressure.
Also, when full of liquid, at 20' tall, I calculate the pressure at the bottom to be around 8 psi based on this.
