    I know this has been discussed a million times, but I can't nail down what I'm looking for in the pilot batch. I'm looking for a clean, crisp honey ale, but with a nice malt presence as well.

    I've done 6 gallon batches... I've used honey malt, and I'm not getting the taste or aroma that I'm looking for. I've added wildflower honey at flame-out, I've added wildflower honey at peak krausen, and it's fermenting out the taste/aroma that I'm looking for.

    I do want the sweetness to pop out on this beer, but I'm losing aroma and sweetness.

    What percentage of your grain bill is the honey malt?

    What is your mash schedule?

      Try 1\2 lb per gallon buckwheat honey in secondary.
