  • Dried yeast for Witbiers?

    Hello,

    Does anyone have any recommendations for a dried strain that works for Belgian Witbiers?

    Safbrew T-58

    You may want to look at Safbrew T-58 dry yeast from Fermentis. I did a Dunkelweizen with it once and thought it would do better in a Belgian Wit.

        I've done both a Belgian Pale and a Witbier with T-58. I think the yeast character was much more suited to the Wit, although the pale settled down into a pretty nice beer. Fermented at around 70F, this yeast is not terribly phenolic, so it lets the spices in a light Wit come through.
