HI:
Just a quick question:
filled my kettle with (filtered) water for mashing the next day.
Before heating the water to 209*F (I need that temp. for mashing in the next morning to 154*F), the pH was 7.04.
I measured the pH before mashing-in the next day, and pH is 7.85??????
How come?

High bicarbonate water. The bicarbonate breaks down, liberating CO2. Did you cool sample before checking pH?
