Wondering if anyone has had any experience with wyeasts lambic blend. Also interested in knowing if anyone prefers to innouculate with individual cultures for a lambic style beer. We are considering primary fermentation in our brewhouse and then sending the beer down to cellar in barrels where we would innouculate. Certianly the messier option would be wyeast blend straight into the barrels for primary as well. Thanks.
