  • Cleaner Wit strain/process?

    Looking for alternatives to the 2 main wit strains currently available from most of the suppliers (ex:WLP400 +410, WY3942+3944).

    Havnt gone back and tried the Wyeast recently, but with the whitelabs and BSI we get a lot more banana and clove than I want (which is next to none).

    Any thoughts on other strains? Considered blending in our house ale yeast, but the is a seasonal we brew and re pitch so I'm concerned with consistency from beginning to end of the run.

    Try WLP320. Although it is a Hef-like strain, still much less 4--vinyl and isoamyl than their WLP400.
