Wondering if anyone has and would be willing to share information sales data from their urban taproom. We are in the process of planning out a taproom space in a well trafficked area of Boston but are hoping to keep the lights on by selling as much as possible through the taproom. We've run projections on through-put with sizes from a 100-170 person taproom based on projected occupancy/hour, but we're was hoping there were bold souls with real-life numbers and experiences in urban taprooms who could help sanity check things.
Anyone out there with personal experience and data on this that would be willing to help a couple founders to stop waking up at 3 AM in cold sweats? We're wondering about, total volume through the taproom and what your taproom size is? Have you broken volume down to bbl/seat? And finally, what was the rate of growth of your taproom sales?
