  • Making spruce soft drink

    I'm looking to make a soft drink, non-alcoholic, using spruce. I found some references in old texts but I can't find how much spruce I should use per gallon. This will be the only flavoring in the soda drink and I'm using cane sugar. Does anyone have experience making this? My finished volume will be four barrels.

    I only have two insights.

    1) I use 1 gallon ziplock bag full for a 5 gallon batch

    2) I wash and freeze mine before use, and throw them into secondary (i.e. I age on the tips)

    Two things happen. You do get some good pine flavor. If you freeze them, the tips take on notes of strawberry. I prefer this method for the flavors created. If this is not to your liking, you can throw them in the boil (last 5 min.) or use branches in the mash as a false bottom to extract solely pine flavor.
