    Just finishing up a tap line cleaning before our brewpub is closed for four more days. I hate to fill the lines with beer again and let it sit for four days, but I also wouldn't want to let the lines sit dry or full of water and risk any kind of growth. Turning on glycol would result in frozen lines. Having a hard time deciding on the best course of action here. 24 taps, about 120 ft runs so not a small amount of beer in the lines.

    So what do you guys think? Fill with beer, water, acid/sani, air?

    We leave the lines to our outdoor serving kiosk empty all winter. Lows of ~-22F this winter. I clean the lines, then blow them down with CO2 until they seem to be empty. No problems in five years of doing this.

    Leaving the lines packed with beer is the wrong way to go.
