Just finishing up a tap line cleaning before our brewpub is closed for four more days. I hate to fill the lines with beer again and let it sit for four days, but I also wouldn't want to let the lines sit dry or full of water and risk any kind of growth. Turning on glycol would result in frozen lines. Having a hard time deciding on the best course of action here. 24 taps, about 120 ft runs so not a small amount of beer in the lines.
So what do you guys think? Fill with beer, water, acid/sani, air?
