  • Conical fermentor chilling

    We are waiting for delivery for our new conical fermentors (13BBL/150HL) and during planning a question came up about
    chilling. Should we chill the cone + sides or just only the sides during primary fermentation? What do you guys recommend?

    Side only for primary, and cooling to diacetyl rest. Don't use the cone during this period, as the yeast will settle to the bottom and just sit there and sulk

    Cone only for yeast removal once down to the temperature you want for diacetyl rest and dry hopping (if you are going to do that)

    Possibly both for cooling to conditioning temp

      When we have used the cones for cooling, we got stratified beer--cold on the bottom, warm on top. Cooling from the very bottom of the ferm doesn't establish a thermo-circulation cycle. Some of our ferms have three jackets, and we've learned to use the highest jacket that is completely covered.
