  • Final Gravity dropping below normal

I just had two brews in a row drop down about 3-4 points below normal for us. We use US-05 and typically get 1.010 on a pale ale. This time it finished at 1.007. Same thing on another brew that typically finishes 1.013 went down to 1.009.

I believe this is the result of a recent change where we began acidifying our sparge water. Anyone else had this same result from acidifying sparge water or think it could be the result of something else?

Anyone care to weigh in on their target PH for sparge water? Our mashes typically run 5.2-5.3 PH.

    thanks for any input.

    Is it your yeast?

Are you harvesting and re-pitching your yeast, or just using new pitch for each batch?

the two batches mentioned above were different. One was harvested and re-pitched after one previous brew. The other was fresh out of the package.
