88 Management has 9 (going on 11) restaurants throughout the state of Nebraska. We are opening our first brewery in Lincoln Nebraska and we are searching for the right candidate to run the operation. Lincoln is a city full of some of Nebraska’s best breweries including Zipline, Empryean, Boiler Brewing, Ploughshare, White Elm and Backswing Brewing. This site will house a 7 barrel brew house, 2 x 15 BBL and 2 x 7 BBL fermentation vessels. The brewery itself will be attached to 2 of our restaurants and will supply both of the on-site restaurants as well as our other restaurants with beer. We expect sales of approx 450 BBL our first year from strictly restaurants in our group.
Local Beer Patio Kitchen is one of our concepts that has grown rapidly in the last 2 years. We currently have 3 locations going on 4. Local focuses on showcasing great beer produced in the State of Nebraska. We have 60, 48 and 30 taps at the 3 locations. The Location in Lincoln will feature 48 taps. The brewery would be loosely associated with Local and would provide the majority of its beer to this concept's 4 locations with some beer being sold to our other concepts.
QUALIFIED APPLICANT MUST POSSESS THE FOLLOWING SKILLS AND EXPERIENCE
Technical Qualifications
• 2+ years of professional brewing experience in a brewery, brewpub, or production brewery
• Preferably a Degree or Certificate in Brewing Science, Chemistry, Micro Biology, or Engineering is preferred
• Cicerone Certification (Level 2) is a preferred
• Proficient technical knowledge in all applicable aspects of the brewing and kegging process.
• Source and maintain ingredients, develop recipes, be obsessive about sanitation and quality control
• Develop SOPs to monitor and enforce high standards of quality and excellence
• Experience using good manufacturing practices (GMP)
• Possess a strong mechanical understanding and background
• Have experience with DIY maintenance in the brewery and restaurant, if necessary
• Forklift operation experience/certification
Brewery Qualifications
• A comprehensive knowledge of craft beer
• Ability to design and brew a wide variety of styles, ranging from classic to experimental
• Ability to multi-task and work in a fast-paced brewpub and production environment
• Flexibility, results-oriented mindset and a good attitude are essential
• Strong verbal and written communication skills, online and offline
• Ability and willingness to educate staff in the brewing process, beer styles, and craft beer culture.
• Proficient in Microsoft Excel spreadsheet development and tracking
• Ability to accurately record inventory, understand and monitor cost control numbers
• Must have the utmost attention to details and cleanliness in all areas of brewing
• Must be adept at Federal and State Excise Tax recording and reporting
• Ability to work independently
• A friendly and public personality
• Proficient in beer line cleaning, draft line balancing, and serving
• Ability to function in team environment (restaurant and brewery)
• Ability to take direction from owners
• Willingness to work full-time and be flexible, including extended hours and weekends, as needed
Physical Qualifications
• Ability to lift and move up to 55 pounds, climb ladders and ramps, crouch, and work in tight spaces
• Willingness to be frequently exposed to wet conditions and work in extreme temperatures
• Willingness and ability to work safely with industrial grade chemicals
• Willingness to work safely in environments with variable noise levels
