  • Lactobacillus Fermentations

    Has anyone attempted an all lacto fermentation? I will be brewing a Berliner Weisse style beer in split batch fermentations. 1/2 batch will be 1.032 OG and fermented with only lactobacillus delbreukii. The other half will be fermented with our house ale strain and blended to taste. I would like to know how long it would take to ferment 8 bbls of wort with 2 litres of lacto and how dry it gets. Also I would like to know what temperatures have worked for anyone who has tried this.
