  • Removing Acetaldehyde

    A lager we have in tank has been chilled and carbed with Acetaldehyde still present. It slipped through as we've never had Acetaldehyde in our beers before. In hindsight, occur likely causes are harvesting yeast from another ferment too early and/or over oxygenation.

    We now have to work out the most efficient and effective way to remove the Acetaldehyde. As I see it:

    - 'Gas wash' with CO2:
    *I've tried doing this at 1.0bar for an hour but I'm concerned about over carbing the beer. Appeared to remove a little but no where near enough.

    - De gas and warm up the beer and pitch still fermenting beer into it:
    * Possibly change flavor profile of beer
    * Have access to Ale and Lager yeasts to do so: What is best?
    * Will I have head retention issues as carbing beer twice?

    - Use Potassium Metabisulfite:
    * Will this effect flavor?
    * How much did you use and how do you get it into solution?
    * Is it successful?
    * Does the resulting sulphur blow off?
