    About Well 80

    Our brewpub, Well 80 Brewhouse, will be a 200 seat restaurant featuring an on-display 10bbl Portland Kettle Works steam brewhouse. The brewery has three 20bbl jacketed fermenters, one 20bbl jacketed brite tank, and two stacked 10bbl horizontal lagering tanks. Our walk-in has three 10bbl jacketed serving tanks and room for 40+ 1/2bbl kegs and 20+ 1/6bbl kegs, with additional room for expansion. Our brewing water comes from an artesian well, which is on the same aquifer which supplied the Olympia brewing company, which provides us with pure water at 52 degrees and 35 gpm year-round.

    Construction is underway and we plan to open the doors this fall.

    The building has an open floor plan with high ceilings and exposed trusses, an all-ages section and a 21+ bar, indoor and outdoor seating, and a comfortable lounge area. We plan to utilize local and sustainable products where we can.

    Our ownership group has an extensive background in the restaurant industry and we're looking for a brewing partner to help establish and grow this brewpub concept.


    Olympia? What’s the deal?

    Olympia, Puget Sound’s southernmost port city, is the State Capital of Washington. We’re located in the middle of the PNW brewscape; on I-5, just 60 miles south of Seattle,100 miles north of Portland, and smack-dab between the Olympic and Cascade mountain ranges. Along with adjoining towns Tumwater and Lacey, the Olympia area is home to nearly 200,000 residents. There are three colleges: The Evergreen State College, Saint Martin’s University, and South Puget Sound Community College, with the latter offering an Associates Degree in Craft Brewing and Distilling starting this fall.

    Most people associate Olympia with the former Olympia Brewing Company, which operated in Tumwater from 1896 until 2003. During the 60’s, 70’s, and 80’s OBC would annually produce over 4 million bbl’s per year. Although unoccupied ever since, the old brewery buildings remain as a symbol of the region’s former brewing industry giant.


    Olympia beer had a famous slogan: “It’s the Water”. A phrase that was coined by founder Leopold Schmidt when he discovered artesian wells dotting the landscape. These wells provided Schmidt with pure fast-flowing brewing water, and can still be found throughout the town today. A 1930’s study found 96 such wells in downtown Olympia. Our building at 514 4th Ave houses well number 80, which will provide the water for our brewing operations.


    The Olympia Beer brand lives on to this day and is produced by Pabst, but it is made elsewhere is technically no longer “The Water”.


    The town is still very proud of that brewing history, and is working to see as much of it preserved as possible. Olympians are hard-working, outdoor-playing, community-oriented, and like to have a good time with friends. Cost of living is low, and quality of life is high.


    Roles and Responsibilities

    -Be the face of our brewing operation, within the parameters of our core values: CHOPS: Community, Hospitality, Originality, Passion, and Stability.

    -Serve as a key member of our management team and meet regularly with FOH Manager, BOH Manager, Bar Manager, General Manager, and Ownership in shaping the direction of the pub together.

    -Recipe formulation and documentation

    -Comply with federal and state regulations, maintain and complete tax forms and documents

    -Conduct regular staff training and education

    -Marketing, outreach, and public education

    -Facilities and equipment maintenance - from well to tap

    -Ordering, budgeting, and maintaining stock

    -Maintain supply to meet demand on flagship and seasonal offerings

    -Safety compliance

    -Quality control and sanitation

    -Continuing self education


    Technical Requirements and Qualifications

    -3+ years pro brewing experience

    -Proficient in brewing multiple styles of lagers and ales

    -Formal education in brewing from accredited program a plus

    -Extensive knowledge of all aspects of brewing operations and sanitation

    -Experienced in draft line maintenance

    -Yeast and grain handling knowledge and experience

    -Able to take advice as well as initiative


    Personal Requirements and Qualifications

    -Ability to work independently and as part of a team

    -Passion for the craft beverage industry

    -Creativity and curiosity

    -Desire to learn and explore

    -Outgoing and approachable personality

    -High science and math aptitude

    -Brewpub or restaurant experience a plus


    Physical Requirements

    -Repeatedly carry and lift heavy things, like equipment and 55lb bags, overhead

    -Work on your feet for long periods of time
