Just curious about the possible profile differences between force nitrogenating a beer under pressure, versus simply carbonating a beer with CO2 to under 2 vols, and serving with beer gas (75%25%). We've been running the latter, but have been increasingly curious about a new bright tank rated to >25 PSI in order to make a "true" nitro. Any thoughts?
