    Threadbare Cellar Technician (Pittsburgh, PA)
    This position will report directly to the Head of Production and, at times, to owners.

    Requirements
    This is a physical position. The Cellar Technician must be able to consistently lift 50+ lbs. be able to stand for long periods of time, and be comfortable working on their feet. Candidate should have previous forklift experience or a willingness to learn proper forklift operating procedures.

    Safety must always be a priority. Due to the physical nature of the job and the inherent risks of working in a production facility doing this job safely must be your first priority.

    Must have an unyielding love of cider! Must be honest, trustworthy, dedicated, hard-working, punctual, have a positive attitude, receptive to instruction and self-motivated as well as have high attention to detail and a willingness to help others much like our namesake Johnny Appleseed. A good palate, able to detect and distinguish between flaws, off-flavors, and other flavor attributes is important. Cellar tech will follow Standard Operating Procedures (SOPs) and Good Manufacturing Practices (GMPs).

    Responsibilities:

    Cleaning and Organization


    The cleanliness of the cellar is imperative to making high quality ciders. There’s a saying in the cider industry that cider makers are glorified janitors. At threadbare we take sanitary practices and aseptic techniques seriously, we want to give our yeast a happy home to live, make alcohol and grow old in.

    Cellar

    • Operate pumps to receive juice, inoculate juice, rackings, stop fermentation, and blending final product
    • Prepare additions for depectinization, pitching yeast, fining, concentrate, nutrients, sulfites, hops, bottle conditioning etc.
    • Perform routine laboratory work, including gravities, pH, Sulphur dioxide titrations, carbonation testing, temperature adjustments and QA/QC measurements
    • Operate Plate and Frame Filter, Membrane Filter with proper CIP protocols
    • Directly responsible for maintaining quality standards in all areas of Cider Production.
    • The ideal person will be responsible in mixing chemicals, handling totes of raw cider with forklift, carbonating tanks with high pressure, racking/ filtering product, tasting product for off flavors and sensory analysis, and other specialized tasks around the cellar.

    Packaging

    Set up, operation and breakdown of bottling, labeling, kegging equipment. Ability to perform routine maintenance on bottling line as needed as well as quality checks during bottling runs are a plus. Operate batch pasteurizer at appropriate temperatures/times to ensure shelf stability in products with residual sweetness.

    Recordkeeping

    Cider making is as much a science as an art. Keeping good records is not only required by law, but important to determining where something went wrong, replicating things that went right, and consistently improving our product.

    Education Requirements:

    • Experience in a brewery, winery, or cidery a plus, an interest in fermentation is necessary
    • College Degree or Associates degree in a mechanical field required

    About Us:

    It started with Wigle Whiskey. Five years ago, at our family-owned Distillery in Pittsburgh we started making seasonal whiskeys that celebrated the regions’ apple bounty. Whiskey finished with apple wood staves; Walkabout, whiskey proofed down with local apple cider. Before we knew it we were deep into apples and regional apple history, including falling in love with our quirky Pittsburgher, Johnny Appleseed Chapman.

    And that was before we started getting deep into the goodie box of apple yeasts and ferments, diving into Pommeau and apple brandies.

    At the same time we found a second barrelhouse for our burgeoning whiskey inventory and tucked behind it was a 10,000 square foot historic tannery, oozing with charm (ie construction complexities and budget overruns) that was just begging to be a ciderhouse.

    So here we are pumping out farmhouse, bottle conditioned, hopped, wild fermented, and barrel aged ciders. And we’re so glad you’ve joined us to explore a new American cider frontier.Click image for larger version
