What's the deal with Wyeast??

    Another vote for dry. Many things going for it; ease of use, can keep an ample stock on hand, doesn't much matter how it's shipped, price, etc.

    Some people dismiss dry yeast because of old prejudices, and it is true that it used to be of poor quality. However, companies like Lallemand and Fermentis have made great advances and the products are excellent. The sole reason I can think of not to use dry is lack on variety, but even that isn't that big of a deal anymore. Fermentis, for instance, has 2 or 3 good lager strains (including the Weihenstephan strain), a good American ale (the popular Chico), a good British ale (Whitbread), a good Belgian strain, Hefe strain (also Weihenstephan), and a few others. People are making award winning beer with this stuff. What's not to like?
