  • Bentonite for clarifying in the fermenter

Does anyone have any experience using bentonite clay for clarifying in the fermenter? We're having problems keeping chunks out of cans of our IPA. We centrifuge but don't filter our beers, and looking for a natural product to help drop the chunks out. Silica gel and PVPP have been recommended to me, but I'm not sold that if used, none of it would carry over into the can or keg.

Bentonite may work brilliantly for wine, but my experience of it was awful. We had over 20 % losses (nearer 30 % I think) of fine fluffy "near sediment" when used on its own. We did those couple of trials and gave up as the "sediment" was also untreatable in our recovered beer handling plant - which coped brilliantly with silica gel, PVPP and isinglass finings sediments.

Just use something like a 10 micron trap filter after PVPP or silica gels to trap any residues.
