    Hi,

    I’m working on some production projections for a small start-up. They have a 10 bbl brewhouse, and a mix of 20 bbl cylindroconicals and 10 bbl horizontal fermenters. I’m working from an assumption of 18-day cycle times for ales in the cylindroconcicals (reasonable?), but I’m not sure what to use for the horizontals. I know the geometry of the cylindroconicals promotes convection and thus a faster fermentation. I know the geometry of the horizontals provides a shorter settling distance and larger yeast/beer interface and thus faster conditioning. I don’t know how these two considerations net out though.

    Any thoughts on what I should be using as estimates for cycle times for these two different types of fermenters?
